Energy Bites


My due date for Evangeline is tomorrow, May 4th. I’m really hoping she’s born in the next 2 days, but we will just have to wait and see. One of those dates just so happens to be one of my best friend’s birthdays. (Holla, Maggi!) And the other (the 4th) is National Star Wars Appreciation Day. May the Fourth be with you!
Anyway, I’ve been prepared for a while to cut back on my sugar intake as soon as I have her. In preparation for having her, I’ve already cut back and discovered a super tasty way to satisfy my strong sweet tooth!
Here’s where the recipe comes in. Cyndi was telling me about energy bites that their family really likes, so I looked up some recipes and came up with my own recipe for a couple of different versions. A chocolate/peanut butter kind and one that is just peanut butter. These are just basic measurements. But I may have added a little bit more of one thing or another to get it to be the right consistency. I added more brewer’s yeast to the kind without cocoa. Brewer’s yeast is very optional. But it’s high in B vitamins and apparently supposed to be helpful for milk supply, hence my use of it.

1 cup old fashioned oats
1/2 cup peanut butter
1/2 cup ground flax seed
1/3 cup honey
1-2 tbsp brewer’s yeast
1 tbsp unsweetened cocoa

Mix and refrigerate until they’re able to be rolled into balls. After the boys and I did a little snacking on some of the dough before I rolled them, I was able to get around 22 of each of them (I think.) Then I just stuck them in the freezer. I think they taste best after it thaws for about 5 minutes.
So I’m able to fulfill my craving for sweets, and getting a dose of nutrition and 3 ingredients that are supposed to help with milk supply (oats, flax seed, and brewer’s yeast.) And since they are super, super easy to make, I wanted to make sure I remembered this recipe!
I didn’t take any pictures of them so I’ll include some random pictures from the last couple weeks instead. Mayci did a great job getting some maternity/family pictures of us. But I only have a couple on my phone.

Homemade hot chocolate


Since today was the big snow storm, I wanted to let the boys have a special treat, hot chocolate. Unfortunately (for them) we don’t ever drink it. I quickly googled a recipe for homemade hot chocolate and picked Martha Stewart’s recipe. Her recipe makes 92 servings. Besides not needing that much, we didn’t have enough cocoa to make it. So I halved the recipe.

I used
1 3/4 sugar
1 cup cocoa
1/8 cup dark cocoa
1/2 tablespoon salt

The dark cocoa was only because I ran out of regular cocoa. Anyway, I sifted it all together to get rid of lumps and stored it in the cocoa container I had just emptied. The recipe calls for 2 tablespoons after heating up a cup of milk. We each had about half. Then we added our marshmallows and enjoyed! I wouldn’t normally drink it but I wanted to try it. It was actually really good and I would be happy to make a cup for anyone who comes over 😉
Anyway, now to follow up with some blurry iPod pictures.
Kai begged for this special cup that Maggi gave me for Christmas. Liam just got what I gave him. I am not pictured because it was a lazy day–I was not camera ready.
And Kingston misses the fun because he naps. Coming soon–a post about Kingston. Because he doesn’t have a post dedicated to him yet and he is hilarious!
